I love watermelon. It's the kind of love where I can slice a watermelon in half, sit down with a spoon and dig in until its all gone. A little much? Probably, I'll chastise myself later as I am up all night going to the wash room...at least I'll be hydrated? I knew I wanted to come up with a drink that would highlight the delicious watermelon flavor, while also keeping it quick and simple; easy to enjoy on those hot summer days and that's where the watermelon slushie came from.
- 1 Large Watermelon, cubed and frozen (~5 cups)*
- 2 tbsp Sugar
- 1 lime, juiced
- 1/4 fresh mint leaves (optional)
*If you'd like to skip out on freezing your watermelon in advance, cube it as you normally would and incorporate ice instead to help you get that slushie consistency. Start with 1 cup and as more as needed.
Add all ingredients to a blender with about 1 cup of water and pulse to begin breaking up the watermelon. Once pulsed a few times, blend on high to fully blend ingredients into a thick slushie consistency. If it is too thick for your liking add more water.
Divide into 4 glasses, garnish with a sprig of mint and round of lime. Serve and enjoy!
